While my sister and I were driving together to my Aunts house to celebrate her Birthday (Happy Birthday Auntie!)  she mentioned me telling her what to buy for some new healthy meal ideas. She gave me the inspiration for today's post! When I grocery shop I always try to stay clear of boxed processed foods. just think about staying around the outer edges of the grocery store..with some exceptions!

  • Sweet Potatoes

These are just some of my favorites. Of course you can see the pattern here, lots of protein, vegetables, fruits, good carbohydrates, and healthy fats! Healthy fats are so important to losing weight and making sure your body functions properly. We all need about 2 TBSP of healthy fats a day!

Recipe of the day:
Baked Salmon, asparagus, and sweet potato fries

For the Salmon I simply used a cast iron pan and sprayed it with a little Olive Oil. Turned the oven on to 450 degrees, seasoned the salmon with salt, pepper, and garlic powder and baked for about 12 minutes until flaky. You absolutely need to buy the fresh salmon not frozen. It comes out ammmmazing! Salmon not only tastes fabulous but it is also highly nutritious. It is high in protein, contains good fats, and also contains a full days requirement of vitamin D.
The asparagus was good right on the same pan as the salmon same temperature same amount of time and it came out to my perfect liking...a little crisp! You may need to adjust the cooking time and temperature to your liking!
The Sweet potato fries take longer to cook so make sure to put those in first! I like to microwave my sweet potato first then slice it up (or you can dice into cubes) spread onto a pan with lightly sprayed olive oil, sprinkle with salt and pepper. Some people like to sprinkle theirs with cinnamon which I have yet to try!
As far as serving sizes I try to stick to about 4-5 oz of salmon, and half a sweet potato when I am not on my competition diet. The about picture is a whole small sweet potato but more than half those fries went to my little!
This is one of my all time favorite meals! Hope you enjoy it!!
